Binchotan (備長炭), or white charcoal, traces its origins back to the Edo period in the Wakayama Prefecture of Japan. The traditional crafting process is an art form: wood is slowly carbonized at low temperatures over several days. The kiln temperature is then rapidly spiked to over 1200°C. Finally, the glowing charcoal is pulled from the kiln and immediately smothered in a cooling mixture of white ash and sand.

The Making of Binchotan
4-Step Traditional Process
Wood Preparation
Hardwood (Eucalyptus, Longan, Lychee, Orange) is carefully selected, cut to size, and sun-dried.
15-Day Kiln Drying
Wood is stacked inside the kiln and slowly dried using external firewood for 15 days to remove all moisture.
1,200°C Carbonization
The kiln is sealed for anaerobic burning. The temperature is spiked to 1,200°C, creating extreme density and purity.
Ash Quenching
Glowing charcoal is pulled from the kiln and rapidly smothered in an ash/sand mixture, giving it the signature white coating.
